In the latest edition of the "Food Myths" section of the Azerbaijan Food Safety Institute (AFSI), clarity was provided regarding the existing opinions that frozen fruits and vegetables are ineffective.
Medianews.az According to the report citing Foodinfo.az, specialists from the institute state that opinions suggesting frozen fruits and vegetables are ineffective are not scientifically confirmed. Indeed, quick freezing (IQF) technology allows preserving most of the vitamin and mineral content of the products.
Although there may be certain decreases in some sensitive vitamins, this is not only related to freezing but also to processing, storage, and cooking methods. On the other hand, the nutritional value can also decrease in "fresh" products that are stored for a long time.
