Most people are accustomed to immediately placing boiled eggs into cold or ice water. Although this method seems convenient, it is not always appropriate.

Medianews.az reports citing foreign media that if you intend to store eggs for several days, it is more appropriate to cool them gradually.

According to experts, a sharp temperature change causes invisible microcracks to form in the eggshell. These cracks reduce the freshness and shelf life of the product. Since the shell is the protective barrier of the egg, its damage directly affects the quality.

When a hot egg is dropped into ice water, the shell rapidly cracks, while the inside remains warm. This can cause several problems:

  • formation of microcracks,
  • change in the protein structure (it becomes firmer and “rubber-like”),
  • weakening of the protective layer beneath the shell.

Experts state that to store eggs for a longer time and to achieve better texture, they should be cooled slowly.
