Eating meat grilled over an open flame in the form of kebab is harmful to the body. Therefore, if you eat kebab at most three times in summer - once a month, it will not harm your health.

Medianews.az Referring to Medicina.az, it is reported that this opinion was expressed by Sergey Solodnikov, MD and associate professor of the Department of Chemistry and Biotechnology at Perm National Research Polytechnic University (PNRPU).

The scientist recalled that harmful substances - carcinogens accumulate in the charred crust of grilled meat. These compounds can cause the development of cancer:

"To minimize the carcinogenic risk, it is advisable to limit the consumption frequency and adjust the portion size according to your personal needs. Eating 100-200 grams of kebab no more than once a month is considered safe so as not to increase the risk of cancer. This portion, especially when consumed together with herbs rich in antioxidants such as parsley, coriander, basil, or arugula, will not significantly increase the risk of gastrointestinal cancer."

Turkey, rabbit, and fish are the safest meats. The specialist noted that it is good to use maple or oak charcoal when grilling, since they ignite easily and do not emit toxic substances.

"Special enzymes in the liver try to break down carcinogens and dissolve them in water to excrete via bile or urine. However, the problem is that this process sometimes produces an intermediate substance called epoxide, which is more aggressive and can cause mutations by damaging DNA in liver, intestinal, or other organ cells.

If these epoxides affect genes controlling cell division and the immune system cannot eliminate these mutations, they can start dividing uncontrollably - this is the beginning of cancer," the scientist added.
